Organic viticulture since 2011: sustainability for great terroir wines
Working the land is a true privilege. However, it is above all a huge responsibility. Consequently, back in 2011, we made the strong choice to switch to organic grape growing. In my eyes, this is not just a marketing label on a bottle. On the contrary, it is a genuine philosophy of life.
Today, we face increasingly intense climate change. Between dry summers and extreme weather events, we focus above all on sustainability. Indeed, organic farming strengthens the natural resilience of our vines. Thus, we work our granitic soils without synthetic chemicals. As a result, the roots plunge deep into the bedrock. They then draw all the freshness and minerality that you taste in your glass.
However, you cannot make great organic Alsace wines without living soils! Therefore, biodiversity is our best ally in the vineyard. Trees, natural grass cover, and beneficial insects all play a key role. In short, every living creature contributes to the balance of our ecosystem.
This little ladybug greeting us during the harvest sums it all up. In our vineyards, nature and the people who care for it are one. Moreover, this naturally brings us to our second pillar.
People first: the strength of a family-owned organic winery in Alsace
When you order our wines online, you directly support sincere local craftsmanship. The same goes when you push open the door of our tasting room. Indeed, Domaine Schaeffer-Woerly is proud to remain a human-scale estate. We therefore farm 8 hectares of vines. This is an ideal size to pamper every single plot and vine stock.
Here, family spirit and teamwork reign supreme. On a daily basis, five of us share this adventure. First of all, there are my parents, Lucie and Vincent. They built solid foundations and still share their precious expertise every day. Next, our two essential team members, Élodie and Gauthier, work with passion in the vines and the cellar. Finally, there is myself, Maxime.
Furthermore, a cheerful crew of about fifteen pickers joins us every autumn. Together, we carry out a 100% manual harvest. Admittedly, this is a demanding choice. Nevertheless, it is essential to sort the finest grapes directly on the vine. In addition, it preserves the warm conviviality of our family-owned organic winery in Alsace.
A passion for wine: creative and living cuvées to discover online or at the estate
Why do we do all this? Above all, out of love for great taste and sharing! Our ambition is therefore to craft sincere, digestible, and emotional wines. On the one hand, our Grand Cru Frankstein wines and traditional Alsace grape varieties express the pure minerality of granite. On the other hand, I love leaving plenty of room for creativity.
For instance, I love crafting natural wines with no added sulfites and exploring skin-contact macerations (orange wines). Thus, we age our wines without unnecessary additives. Wine is indeed a wonderful playground of freedom! Afterwards, it is a huge pride to see our bottles travel to your table. We also love seeing them poured in passionate wine bars.

Keeping heritage alive: 17th-century tasting cellar and “Au Millésime” guesthouse
Being an independent winemaker in Alsace also means protecting centuries of history. In Dambach-la-Ville, we are located right on the famous Alsace Wine Route. We are therefore lucky to work inside historic winemaker houses dating back to the 17th century. Rather than freezing them in the past, we renovate them with passion. Consequently, they continue to live through the guests we welcome.
This authentic setting blends old stones, centuries-old wooden beams, and family warmth. It is right here that we open the doors of our tasting cellar for direct winery sales.
In addition, we want to offer you a complete wine tourism experience at our family-owned organic winery in Alsace. Therefore, we recently opened our brand-new guesthouse (gîte), “Au Millésime”. This comfortable holiday apartment sits right inside our renovated historic building. As a result, it is the perfect base for your wine weekends and holidays in Alsace.
