Vine Tying: An Essential Winemaker’s Gesture
As winter fades, the vine slowly enters a new cycle.
After pruning comes the time for vine tying. This step truly marks the beginning of the new vintage.
Vine tying consists of carefully securing the canes to the trellis wires. Though it may seem simple, this gesture is decisive. It structures future growth, ensures even grape distribution, and optimizes sun exposure throughout the season.
Precise tying promotes uniform ripening and prepares the balance of the future organic Alsace wine from Dambach‑la‑Ville.
At Domaine Schaeffer‑Woerly, this work is carried out entirely by hand. We respect the natural rhythm of the vine and the specific characteristics of our granite soils.
Each tied cane is a promise — the promise of a carefully crafted vintage from its very first days.
The First Sap Flow: A Powerful Sign of Spring
By late February, temperatures become milder.
The vine gradually awakens from winter dormancy.
Tiny droplets appear on the pruning cuts.
This is known as the “sap flow,” sometimes poetically called the “vine’s tears.”
These translucent drops signal the return of sap circulation.
The vegetative cycle begins again.
The 2026 vintage is underway.
In recent years, this phenomenon has sometimes occurred earlier.
Climate change is altering natural balances.
In Dambach‑la‑Ville, we adapt our practices accordingly.
We strive to preserve the freshness and mineral tension of our organic Alsace wines despite these changes.

Climate Change: Adapting to Preserve Alsatian Identity
The Dambach‑la‑Ville vineyard covers approximately 450 hectares and is considered a benchmark in Alsace.
Our estate cultivates 8.5 hectares, including several parcels located in Grand Cru Frankstein. This granite terroir gives our wines finesse and mineral tension.
To preserve the natural balance of our vines, we work the soils to retain moisture. We maintain natural grass cover to reduce water stress. Vine training is adapted to periods of high heat, and harvest dates are carefully adjusted according to each grape variety and each vintage.
Our goal remains clear: to sincerely express the identity of our organic Alsace wines from Dambach‑la‑Ville.
