Feet in the Water, the Birth of Our Organic Alsace Wines

Winter Pruning at Our Organic Winery in Alsace

February wraps the vineyard in an almost solemn silence.
Under the rain, the vine rows seem motionless… and yet, everything begins here.

In the heart of the Alsace Wine Route, in Dambach-la-Ville, our organically farmed estate shapes — vine by vine — the vintage to come.

To be a winemaker is to cultivate and anticipate.

Organic Farming: A Commitment, Not a Trend

Being an organic winemaker in Alsace is not about following fashion — it is about conviction.

We cultivate our parcels with deep respect for life:
naturally maintained soils, preserved biodiversity, and carefully measured interventions.

In recent weeks, rainfall has been remarkable.

Along the gravel paths, water gathers into pools, forming mirrors that reflect the vine rows and the winter sky.

In the vineyard parcels, however, the story is different.

Thanks to living soils — structured by roots, enriched with organic matter, and animated by intense biological activity — water does not stagnate. It slowly infiltrates the depths, replenishing reserves, nourishing underground life, and preparing the vines for the season ahead.

After heavy winter rains, water gathers on vineyard paths while the living soils of our organic Alsace vines naturally absorb moisture.

This image is not a sign of excess, but of balance.

Where mineral soil retains water at the surface, living soil absorbs and transforms it.

It is this invisible vitality — patiently nurtured — that gives birth to balanced, precise grapes, faithful to their terroir.

It is within this quiet alchemy — between rain, patience, and high standards — that our organic Alsace wines are born.

Winter Pruning: The Foundational Gesture of the Vintage

Winter pruning is an act of precision.

Each vine is observed individually. Every cut prepares:

  • aromatic concentration
  • natural yield balance
  • structural finesse
  • ageing potential

This meticulous manual work already shapes our future wines:

  • Organic Alsace Rieslings with chiselled minerality
  • Organic Pinot Gris, ample and structured
  • Elegant and expressive Gewurztraminer
  • Pure and refined Crémant d’Alsace

Nothing is left to chance. Everything begins here, in the stillness of winter.

The Soul of the Alsatian Terroir

When Haut‑Koenigsbourg Castle rises above the mist, the landscape reminds us why we chose this craft.

The Alsace vineyard offers unique conditions. Our role is to reveal its singularity — never to mask it.

To be a winemaker in Alsace is to seek the perfect balance between nature and mastery.
